Ask the Expert: What Retailers Get Wrong About Bringing AI Into Fresh

AI can sound like a major undertaking.

For fresh retailers already managing tight labor, changing demand, shrink, inventory, merchandising and customer expectations, adding another technology to the mix may feel like one more thing for teams to learn and manage. But many of the concerns retailers have before implementing AI don't match what happens once it becomes part of the daily workflow.

Concern: "My experienced team won't trust AI to make ordering decisions."

The reality: AI works best when it supports experience, not replaces it.

Fresh managers know their departments, customers and stores. AI adds another layer of intelligence by analyzing movement, inventory, promotions, seasonality and other factors at a scale that's difficult to manage manually. The result isn't taking decisions away from experienced people. It's giving them a stronger starting point and better information to make those decisions.

Concern: "This is going to add more work to my team's day."

The reality: The goal should be exactly the opposite.

When AI handles more of the calculations, forecasting and analysis behind ordering, teams can spend less time building orders and more time on the work that requires their expertise — merchandising, quality, training and serving customers.

Concern: "Fresh is too unpredictable for AI."

The reality: That's exactly why fresh can benefit from it.

Fresh departments operate with variables that other categories don't. Shelf life, weather, seasonality, promotions, changing demand and product availability can all affect what should be ordered.

AI doesn't eliminate those variables. It helps teams account for more of them, more consistently.

Concern: "Implementation will disrupt the department."

The reality: Successful AI deployment isn't about changing everything overnight.

The best implementations fit technology into the retailer's existing operation, give teams a clear understanding of how it helps them and demonstrate value through everyday use. Adoption becomes much easier when employees can see that the technology is helping solve problems they already deal with every day.

 

The retailers that get the most from AI aren't necessarily the ones with the most technology. They're the ones that view AI as another tool for helping good people make better decisions.

Successful deployment comes down to solving the right problems, fitting into the team's workflow and making the value easy for employees to see.

Because the goal of AI in fresh isn't to run the department for you.
